Ingredients
- Thinly sliced courgette
- thinly sliced onion
- a touch of olive oil
- sea salt
- lemon
- some cooked french beans
Method:
- Slice vegetables and mix together
- I pour on a dressing made from the olive oil, lemon juice, pine nuts and whatever herbs are to hand.
- Mix well, leave in the fridge for a few hours and it’s wonderful. Really tastes of summer.
