  • Courgette
  • Pesto

Method

Using a spiraliser or julienne, create thin spaghetti like strips of your courgette. Put in a frying pan without oil and heat until not quite soft. Stir in pesto and enjoy! I like this either sprinkled with parmesan or served with fried halloumi cheese on top.
